Description

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter, cubed
  • 45 tbsp ice water
  • 3 medium pears, thinly sliced
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling)

Instructions

  1. Mix flour and salt in a bowl. Cut in butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tbsp at a time, until the dough comes together. Shape into a disk, wrap, and chill for 30 minutes.
  3. Preheat oven to 375°F (190°C).
  4. Toss pears with brown sugar, cinnamon, nutmeg, and lemon juice.
  5. Roll the dough into a 12-inch circle on a floured surface. Transfer to a baking sheet.
  6. Arrange pears in the center, leaving a 2-inch border. Fold edges over the filling.
  7. Brush crust with egg wash and sprinkle with coarse sugar.
  8. Bake for 35-40 minutes until golden brown.
  9. Cool slightly before serving.
