Description

A flavorful and easy-to-make noodle salad with a spicy peanut dressing. Perfect for a quick lunch or side dish.


Ingredients

  • 8 oz rice noodles
  • 1/2 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sriracha
  • 1 clove garlic, minced
  • 1/2 cup shredded carrots
  • 1/4 cup chopped cilantro
  • 2 tbsp crushed peanuts
  • 1 tbsp sesame oil
  • 1/4 cup water (adjust for desired consistency)

Instructions

  1. Cook rice noodles according to package instructions. Drain and rinse under cold water.
  2. In a bowl, whisk peanut butter, soy sauce, rice vinegar, honey, sriracha, garlic, and water until smooth.
  3. Toss the noodles with the peanut sauce.
  4. Add shredded carrots and cilantro, mixing well.
  5. Garnish with crushed peanuts and drizzle with sesame oil before serving.

Notes

  • Add more sriracha for extra spice.
  • Use almond butter for a nut-free version.
  • Store leftovers in an airtight container for up to 3 days.
