Ingredients

- 8 oz rice noodles
- 1/2 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sriracha
- 1 clove garlic, minced
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
- 2 tbsp crushed peanuts
- 1 tbsp sesame oil
- 1/4 cup water (adjust for desired consistency)
Instructions
- Cook rice noodles according to package instructions. Drain and rinse under cold water.
- In a bowl, whisk peanut butter, soy sauce, rice vinegar, honey, sriracha, garlic, and water until smooth.
- Toss the noodles with the peanut sauce.
- Add shredded carrots and cilantro, mixing well.
- Garnish with crushed peanuts and drizzle with sesame oil before serving.
Notes
- Add more sriracha for extra spice.
- Use almond butter for a nut-free version.
- Store leftovers in an airtight container for up to 3 days.
