Tiramisu Cupcakes

  • Author: Judy
  • Total Time: Roughly 1 hour (including cooling and frosting)
  • Yield: Approximately 12 cupcakes

Description

A modern twist on the classic Italian dessert, these Tiramisu Cupcakes bring together light, coffee-soaked cupcakes topped with a luscious mascarpone whipped frosting. Finished with a dusting of cocoa and a touch of chocolate garnish, they offer the familiar tiramisu flavors in a fun, portable form.

Ingredients

  • For the Cupcakes:
    • 1 1/4 cups all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 3/4 cup granulated sugar
    • 1/2 cup unsalted butter, softened
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1/2 cup sour cream
    • 1/4 cup espresso or strong brewed coffee, cooled

  • For the Coffee Soak:
    • 1/2 cup espresso or strong brewed coffee
    • 2 tablespoons coffee liqueur (optional)

  • For the Mascarpone Frosting:
    • 1 cup mascarpone cheese
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 cup heavy whipping cream

  • Garnish:
    • Cocoa powder
    • Chocolate curls or grated chocolate

Instructions

  • Prepare the Cupcakes: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners. Whisk together the flour, baking powder, baking soda, and salt. In a separate bowl, cream the sugar and butter until light and fluffy. Add eggs one at a time along with vanilla, then mix in sour cream and the cooled espresso. Gradually fold in the dry ingredients until just combined.
  • Bake: Fill each cupcake liner about ¾ full with batter. Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely on a rack.
  • Coffee Soak: Combine the espresso (and coffee liqueur, if using) for the soak. Use a fork to gently pierce the top of each cooled cupcake several times, then brush the coffee mixture over them for an extra burst of flavor.
  • Frosting: Beat together the mascarpone, powdered sugar, and vanilla until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the mascarpone mixture.
  • Decorate and Serve: Frost each cupcake with the mascarpone cream and finish by dusting with cocoa powder and adding a garnish of chocolate curls or grated chocolate.

Notes

  • For an extra kick of flavor, use a coffee liqueur in the soak.
  • Ensure the cupcakes are completely cooled before applying the coffee soak and frosting to prevent melting.
  • This dessert is best enjoyed on the same day for optimal texture.
